Steve's Cocoa and Chia seed Muffins

This recipe will make
24- 1/3 cup size & 6- 1 cup size muffins, fill leaving ” of the muffin pans unfilled.


ingredients

6-Cups Flour, bargain brand
1-TS Baking Powder
1-ts Salt, No sea salt
2-TS Hershey’s Cocoa, unsweetened
2-Cups Brown Sugar and 1-Cup of White Sugar
1/3 cup & 2-TS Chia Seeds
1-Cup of pecans
2-TS Coffee, good ground coffee
1-TS Cinnamon
2-eggs
1-Cup Canola Oil
2-ts Vanilla extract
1-12oz can Evaporated milk
3-cups water


Add these dry ingredientsbelow in a large plastic punch bowl holding 24 cups or so. This gives you enough room to use hand a mixer and still keep the batter in the bowl. Mix well.
Dry ingredients
6-Cups Flour, bargain brand
1-TS Baking Powder
1-ts Salt, No sea salt
2-TS Hershey’s Cocoa, unsweetened
2-Cups Brown Sugar and 1Cup of White Sugar
1/3-Cup Chia Seeds
2-TS Coffee, good ground coffee, not the cheep stuff
1-TS Cinnamon


Now add wet ingredients,below to dry ingredients.
First mix for 3 minutes, as fast as you can without throwing batter all over the room.
Then use rubber specula on the bottom & sides of bowl knocking off any stuck ingredients, then mix again. Switch to a faster speed and mix the hell out of it, for another 2 to 3 minutes, the smother the better.
2-eggs
1-Cup Canola Oil
2-ts Vanilla extract
1-12oz can Evaporated milk
3-cups water

Use a folded up paper towel dipped in oil, spreading a light coat of oil on your muffin pans, then flower them. Turn pan over, hitting and shaking any of the excess flour off the pan.

Take of one pecan and place it in the bottom of each of the 1/3 cup size pre oiled and flowered muffin pans. In the 1 cup size use 1 pecan or two halves, side by side on the bottom. Chop the rest of the Pecans, in not to small pieces, placing them on top of each muffin.

1-Cup of chopped pecans &
2-TS Ghia Seeds sprinkle on top

Leave muffins in pan until cool. Eat ten or so and place whats left in plastic freezer bags and put in the freezer for tomorrows coffee breaks. It doesn't get any better than this. Ps. the Chia seeds are good for you. Who would have known?
